
We have a new food pairing, pasta with sea food and White wine. Today we have chosen Rivers of wine verdejo.
Ingredients:
- 300-350g of pata,
- 2 carrots
- 3 ripe tomatoes
- 1 onion
- 1 red paper
- 3 garlic cloves
- 6-8 king prawns
- 6-8 clams
- 18 mussels
- 12 squid rings
- Salt
- Olive oil
- Half a glass of whithe wine
This recipe is really easy. First we cook the pasta following the instructions on the pack.
Peel the carrots and place in a blender with the onion, tomatoes, pepper and one garlic clove and blend them until the pieces are around the size of rice grains or so.
Place the vegetables in a pot on low heat with two tablespoons of oil. Add half a glass of wine when it begins to brown and boil to reduce the wine.
Boil the clams and mussels and if we want, we can take advantage of the cooking water to make a fish stock.
When the wine is reduced, add the squid rings. When they are softening, toss in the mussels and clams once they have opened and stir everything. Fry the king prawns with the other two cloves of garlic and a little oil.
Finally we put the pasta in the pot and stir everything well. Add the king prawns and the dish is ready to enjoy.
