
Foods that dont go well with wine. That´s not to say they cannot pair with some wines or work if prepared in a certain way. We refer to those ingredients or dishes that have a big difficulties to match them with wines.
They are dishes and ingredients with which you have to sharpen your wits. Also, if we want to counteract or enhance the flavour of the ingredient, thing are further complicated.
Foods that don’t go well with wine
The first thing we consider a difficult marriage with wine is chocolate. If it is dark, bitter chocolate, we don’t want to add more bitterness with wine. A Port or a sweet wine would be most successful to counteract the bitterness. If it’s milk chocolate or is sweeter, a sparkling wine might be a good choice, without being too sugary.

Asian food can be difficult to pair due to the wide and varied amount of spices that can be found. Of course, foods like sushi can be simpler as they don’t have as many spices. Indian, Indonesian, Chinese. One option is a white wine, as it’s neutral, or even a Riesling without much sweetness.

Smoked fish have very complicated pairing and can be almost impossible. Salmon, mackerel, generally all smoked fish can have serious problems with pairing. If we have to choose a wine, a sparkling may be the best option.

Vegetables and seasonings
A very complicated dish to pair with wine is artichoke, as they are rich in “cinarina”, which is a compound that gives any wine a metallic taste. What determines the pairings in this dish is the rest of what accompanies artichokes: sausage, ham, other vegetables … Depending on what the dish has we can do the pairing(especially with young red wines). Also as in the previous case Gewiirztraminer can be good.

Asparagus has the same problem as artichokes, with cinarina causing problems with the pairing. A fine or manzanilla sherries could be good choices.

Surprisingly, truffles by themselves are difficult to combine, like chocolate. But as an ingredient in recipes it is a true delicacy and easy to pair. Also, tomatoes by themselves can be difficult, with their complex acidity. However, being used mainly as an ingredient with other foods, it does not cause much of a problem.
